Region: Alentejo
Producer: Ad. Cooperativa de Borba
RED WINE:
Grape Varieties: Aragonez, Castelão, Touriga Franca
Vol: 14%
The harvest takes place at the beginning of August. The grapes are destemmed and crushed. The alcoholic fermentation process then begins at a controlled temperature of 25ºC. During this period, maceration lasts for 7 days with the use of pumping over to optimize the extraction of colour, aromas and flavours. This is followed by malolactic fermentation, which is fundamental for the smoothness and softness of the wines. After the period during which the wine stabilizes through physical processes in stainless steel tanks, the wine is filtered and bottled in early Spring.
Contains sulphites.
WHITE WINE:
Grape Varieties: Roupeiro, Arinto, Fernão Pires
Vol: 13%
The harvest begins in August, at night using a machine and preferably in the morning with hand-picking. Upon arrival at the winery, the grapes are immediately destemmed, separated from the resulting must, and pressed. Decantation (separation of the must from the skins) takes place after 24 hours, preserving all the freshness and varietal characteristics of the fruit. Fermentation then begins at a controlled temperature of 18ºC. After a minimum period of 4 months, during which the wine stabilizes through physical processes in stainless steel tanks, the wine is filtered and bottled.
Contains sulphites.
