House Chorizo: Sausage made from pork, cut into pieces larger than 1 cm, mixed with additives, seasonings, and spices. The resulting mixture undergoes a maturation process for 2 to 4 days before being stuffed into natural pork casings that have been previously washed. The final step is drying, first in an electric oven, then in an oak-fired oven (which gives it its characteristic flavor and aroma), and finally, it is placed in a drying room to complete the curing process.
