House Garlic-Wine Chorizo: A sausage made from pork, cut into pieces larger than 1 cm, mixed with additives, condiments, and spices. The resulting mixture undergoes a maturation process for 2 to 4 days, after which it is stuffed into a pre-washed natural pork casing. The final step is drying, initially in an electric kiln, then placed in an ilex wood-fired oven (which gives it its characteristic flavor and aroma), and finally placed in the drying room to complete the curing process.
