PDO sheep's milk cheese is a hard or semi-hard cheese, slightly yellowish in color, with a rough rind. It has a slightly spicy and salty flavor, which is more pronounced in harder cheeses. It is obtained by slowly draining the curds after coagulating raw sheep's milk, using thistle.
