White asparagus is simply common asparagus that grew underground and, due to the lack of sunlight, produced no chlorophyll. It generally has a milder flavor and tougher skin than green asparagus. The most popular way to prepare white asparagus is to boil or steam it, but it also tastes great roasted and grilled.
