Azeitão cheese is produced by slowly draining the curds after coagulating raw, pure sheep's milk, using a thistle infusion that gives it a truly unique flavor, a mixture of acid, salty and spicy.
It has a curing time of at least 20 days, and during this period the cheeses are turned every day and washed so that the rind remains smooth and clean.
The end result is a cheese with a buttery, unctuous, slightly yellowish paste, which deforms slowly.
