Well-formed, whole crust, light straw-yellow in color, uniform. The paste is well-bonded, closed or with some holes, moderately buttery; uniform ivory-white color. The bouquet is smooth, clean, and slightly acidic.
This is the classic Serra da Estrela, which should be served after a few hours out of the cold, cut into slices and accompanied by good bread or thin toast.
