The harvest takes place at the beginning of August. The grapes are destemmed and crushed. The alcoholic fermentation process then begins at a controlled temperature of 25ºC. During this period, maceration occurs for 7 days using remontage (pumping over) to optimize the extraction of color, aromas, and flavors. Malolactic fermentation follows, which is fundamental for the smoothness and softness of the wines. After a period during which the wine stabilizes through physical processes in stainless steel tanks, it is filtered and bottled in early spring.

Harvesting begins in August, at night using machines and preferably in the morning with manual harvesting. Upon arrival at the winery, the grapes are immediately destemmed, separated from the must, and pressed. Decantation (separation of the must from the skins) occurs after 24 hours, preserving all the freshness and varietal characteristics of the fruit. Fermentation then begins at a controlled temperature of 18ºC. After a minimum period of 4 months, during which the wine stabilizes through physical processes in stainless steel tanks, the wine is filtered and bottled.
