Winemaking
The DOC grapes from our associates' harvest are unloaded and immediately destemmed and crushed.
With the addition of selected yeasts, fermentation begins at a controlled temperature (28 °C). During this period, maceration takes place, using the timed remontage process, which lasts for the entire fermentation period, approximately 8 days.
Internship
The wine ages for a short time in tanks, then is stabilized, filtered, and bottled within a year.
Exam Notes
A wine with a crystalline appearance, dark ruby color, aromas of black and red fruits, suggesting wild berries, with notes of spices and cocoa, structured and complex, with a persistent finish.
Harmonization
It pairs well with various red meat dishes, cured meats, and aged or semi-aged cheeses.
Consumption/storage recommendation
The bottles should be stored lying down in a cool place (around 12°C) with some humidity (75%). Consume young or allow to age for 2 years. It should be consumed at a temperature of 16°C.

Winemaking
After the grapes are selected in our associates' vineyards, they are harvested. In the winery, they are unloaded, immediately destemmed and crushed, followed by a light skin maceration (approximately 8 hours) in order to extract all the aromatic compounds from the skins.
Subsequently, the grapes are pressed, with oxidation protection, from which the free-run juice is extracted. After static clarification, it ferments in stainless steel tanks at low temperatures (15/16º) to preserve all the aromas.
Internship
Once alcoholic fermentation is complete, the wine is racked, immediately initiating the stabilization and clarification process.
Exam notes
This wine has a crystalline appearance, a pale straw color, and a fruity aroma suggesting ripe mango and passion fruit, enveloped in citrus notes. On the palate, it is balanced and fresh, in a complex and elegant whole.
Harmonization
It pairs well with salads, seafood, grilled or cooked fish with light sauces, and sushi.
Consumption recommendation
Consume promptly at a temperature of 12ºC.
