Cow's and sheep's milk cheese (EPVA) is a hard or semi-hard cheese, slightly yellowish in color and with a rough rind. It has a slightly spicy and salty flavor, which is more pronounced in harder cheeses, obtained by slowly draining the curds after coagulating raw sheep's milk, using thistle.
