Casa de Vinha d'Alhos Chouriça: Sausage made from pork cut into pieces larger than 1 cm, mixed with additives, seasonings, and spices. The resulting mixture undergoes a maturation process for 2 to 4 days, then is stuffed into a previously washed natural pork casing. The final step is drying, first in an electric oven, then placed in an oven with holm oak wood (which gives it a characteristic flavor and aroma), and finally, it is placed in a drying rack to complete the curing process.
