Well-formed, whole rind, uniform light straw-yellow colour. Well-set paste, closed or with a few eyes, medium buttery; uniform ivory-white colour. Mild, clean, slightly acidic bouquet.

This is the classic Serra da Estrela, which should be served after a few good hours out of the fridge, sliced and accompanied by good bread or thin toast.
