The harvest takes place in early August. The grapes are destemmed and crushed. The alcoholic fermentation process then begins at a controlled temperature of 25°C. During this period, maceration takes place for seven days, with pumping over to optimize the extraction of color, aromas, and flavors. Malolactic fermentation then occurs, essential for the smoothness and softness of the wines. After the period during which the wine stabilizes through physical processes in stainless steel tanks, the wine is filtered and bottled in early spring.

The harvest begins in August, harvesting at night using a machine, and preferably in the morning using a hand harvest. Upon arrival at the winery, the grapes are immediately destemmed, separated from the must, and pressed. Decantation (separation of the must from the skins) takes place after 24 hours, preserving all the freshness and varietal characteristics of the fruit. Fermentation then begins at a controlled temperature of 18°C. After a minimum of four months, during which the wine stabilizes through physical processes in stainless steel tanks, the wine is filtered and bottled.
