This combination of pork head, cartilage, skin, tongue, meat, onion, garlic, herbs, and other ingredients is a convivial and shared meal. The xara head is called terrine, pork pâté, and even head cheese. It makes a wonderful cold appetizer or even an excellent option for stuffing bread.
